Autumn recipe for coffee lovers

5 oz sugar
34 fl oz water
1 vanilla pod/bean cut lengthways
20 oz freshly brewed strong coffee
3 large firm pears
Boil the sugar with water, vanilla and coffee in a saucepan with a lid.
Peel the pears and cut them in half horizontally.
Place the pears completely in the syrup and poach them gently with lid on for 20 mins.
Drain the pears using a slotted spoon, set aside and chill.
Boil up the coffee syrup for about 20 mins until concentrated and thickened.
Pour the coffee syrup over the pears and serve.
