Mug cakes are a great way to satisfy your sweet tooth quickly. Try this quick and easy coffee mug cake in the festive days!

Ingredients

• 1tbsp unsalted butter melted

• 1 large egg

• 3tbsp superfine almond flour

• ½ tsp baking powder

• 1 ½tbsp erythritol sweetener granular

• ½ tsp fine coffee ground

• ½ tsp vanilla extract

Directions

1. Add all ingredients into a microwave-safe mug. Mix with a small whisk until batter is smooth.

2. Cook cake in microwave at full power for 1 min 20 sec.

3. Wait for the cake to settle back down and top with frosting or syrup.

4. Allow the cake to cool for a few minutes before serving.
