Add butter and sugar to a stand mixer. Beat together until the mixture is light and fluffy. Add in egg, almond extract, and vanilla extract until the mixture is well combined.
In a medium mixing bowl, sift together flour and baking powder. Slowly add these dry ingredients to the wet ingredients. Mix all together until well combined.
Roll dough into a ball and place in the fridge for 10 minutes. Preheat oven to 350 degrees.
Roll dough out on a well-floured surface until the dough is 1/4" thick. Use cookie cutters to cut the cookie dough into your favorite festive shapes.
Transfer to a cookie sheet. Freeze for 5-10 minutes.
Remove from freezer. Bake for 7-8 minutes or until cookies start to turn lightly golden around the edges.
Let them cool down completely.
Melt the chocolate in a microwave safe bowl.
Hold cookies by the corner and dip them into the chocolate, leaving just the corner uncovered. Place cookies back down on the parchment paper to cool.
Add sprinkles of your choice to cookies, while chocolate is still melted.
